So, I went looking for something super duper easy, and relatively quick.&nbsp;<\/p>\n\n\n\n<p>Thankfully, there\u2019s always a variation of breakfast casseroles.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"909\" height=\"1024\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213742-909x1024.jpg\" alt=\"\" class=\"wp-image-935\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213742-909x1024.jpg 909w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213742-266x300.jpg 266w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213742-768x865.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213742.jpg 1136w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>Breakfast casserole ingredients.<\/figcaption><\/figure>\n\n\n\n<p>I\u2019ve made breakfast casseroles in a <a href=\"http:\/\/christiniacrippes.com\/food\/2018\/02\/10\/breakfast-for-dinner\/\">sheet pan<\/a> and in a <a href=\"http:\/\/christiniacrippes.com\/food\/2019\/03\/29\/sausage-strata-made-simple\/\">Dutch oven<\/a>, and went with the traditional <a href=\"http:\/\/christiniacrippes.com\/food\/2020\/11\/10\/desperately-craving-trashy-brunch\/\">Denver omelet<\/a> in my little skillet. But the fun thing is, they\u2019re all a little different, and you can\u2019t go wrong with breakfast foods.&nbsp;<\/p>\n\n\n\n<p>The one slight twist on this <a href=\"https:\/\/www.tasteofhome.com\/\">Taste of Home<\/a> recipe is my sweetie accidentally didn\u2019t get enough bacon but did mercifully come across wonderful spicy smokies (Li\u2019l Bites) from <a href=\"https:\/\/www.beelerspurepork.com\/\">Beeler\u2019s<\/a> for an extra breakfast treat, so I just used some of those.&nbsp;<\/p>\n\n\n\n<p>I can\u2019t really take credit for it, considering I didn\u2019t pick the smokies, nor did I make them, but man, they really made the meal. It would\u2019ve been a delight with just bacon, but the smokies accidentally made this an extra special treat. All without extra effort.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"906\" height=\"1024\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213835-906x1024.jpg\" alt=\"\" class=\"wp-image-936\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213835-906x1024.jpg 906w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213835-266x300.jpg 266w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213835-768x868.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2021\/02\/20210201_213835.jpg 1133w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>MMmmmm, smokies.<\/figcaption><\/figure>\n\n\n\n<p>Here\u2019s what I did:&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul><li>1 package (32 oz) frozen cubed hash brown potatoes, thawed<\/li><li>8 oz bacon, cooked and crumbled<\/li><li>8 oz smokies (we used the jalapeno and cheese Li\u2019l Bites from Beeler\u2019s that are highly recommended if you can find them), thickly sliced and cooked in bacon fat to brown if desired (they\u2019re fully cooked so it\u2019s not necessary!)<\/li><li>1 to 1 \u00bd c. shredded cheddar cheese, divided<\/li><li>8 large eggs<\/li><li>2 c. whole milk&nbsp;<\/li><li>Paprika, to taste (I used hot paprika to build on the spice)<\/li><li>Pepper, to taste<\/li><li>Butter for greasing the casserole dish<\/li><\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<p>Heat oven to 350 degrees. Grease a 9 x 13 in. casserole dish.<\/p>\n\n\n\n<p>In a large bowl, combine the hash browns, bacon, smokies, and \u00bd to 1 c. cheese. Spoon into the prepared casserole dish. In a separate large bowl, beat the eggs and milk until blended. Pour the egg mixture over the hash brown mixture. Sprinkle with paprika and pepper.&nbsp;<\/p>\n\n\n\n<p>Bake uncovered, until a knife inserted at the center comes out clean, about 45 to 50 minutes.
