I feel extra bad about that, though I have several unmade recipes ripped from magazines in the binder, because this one came hand-written from my mother.&nbsp;<\/p>\n\n\n\n<p>Even in the era of the Internet where she has shared several recipes with me via email, this one came to me hand-written. I\u2019m not even sure when I got it or why (other than that it\u2019s tasty), or why I never made it.&nbsp;<\/p>\n\n\n\n<p>However, my sweetie recently purchased quinoa for a vegetarian stuffed pepper recipe I <a rel=\"noreferrer noopener\" href=\"http:\/\/christiniacrippes.com\/food\/2020\/07\/24\/no-crust-no-problem-skillet-pie-lives-up-to-its-name\/\" target=\"_blank\">mentioned recently<\/a>, and so we had some extra sitting around, ready to be used. Enter my mom\u2019s herby quinoa recipe.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"1024\" height=\"894\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162108-1024x894.jpg\" alt=\"\" class=\"wp-image-831\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162108-1024x894.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162108-300x262.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162108-768x670.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162108.jpg 1280w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>Herby quinoa ingredients.<\/figcaption><\/figure>\n\n\n\n<p>Her recipe called to be made in a saucepan, but it was a small enough meal, enough for four servings, that it fit easily in my 9-inch Le Creuset.&nbsp;<\/p>\n\n\n\n<p>It was incredibly simple, and incredibly tasty, and I feel incredibly stupid for waiting so long to make it.&nbsp;<\/p>\n\n\n\n<p>While it does have bacon in it, it\u2019s otherwise pretty healthy. Welcome after <a rel=\"noreferrer noopener\" href=\"http:\/\/christiniacrippes.com\/food\/2020\/09\/19\/this-dip-is-loaded\/\" target=\"_blank\">last week\u2019s indulgence<\/a>. The grain, herbs, some toasted almonds, with some bacon, and voila, a tasty weeknight meal is made.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"978\" height=\"1024\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162216-978x1024.jpg\" alt=\"\" class=\"wp-image-832\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162216-978x1024.jpg 978w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162216-287x300.jpg 287w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162216-768x804.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/09\/20200919_162216.jpg 1223w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>So tasty, so simple.<\/figcaption><\/figure>\n\n\n\n<p>Here\u2019s what I did, following Mom\u2019s recipe \u2026 though she forgot to specify the amount of broth so I had to wing that part and it took slightly longer to cook than her recipe said:&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul><li>\u00bd c. slivered almonds<\/li><li>1 t. vegetable oil<\/li><li>4 slices of bacon (her recipe called for two thick pieces, I had thin stuff so I doubled it), \u00bc in. dice<\/li><li>1 small shallot, diced<\/li><li>1 c. quinoa, rinsed<\/li><li>2 c. vegetable or chicken broth<\/li><li>2 sage sprigs (hers called for 1, but I am a sucker for herbs)<\/li><li>1 T. minced chives<\/li><li>1 T. chopped parsley<\/li><li>Salt and pepper to taste<\/li><\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<p>Heat oven to 350 degrees. Spread almonds in pie plate and toast in the oven until golden brown. Let cool.&nbsp;<\/p>\n\n\n\n<p>In a 9- to 10-inch skillet, heat oil, add bacon, and cook until fat has rendered, about 2 minutes. Add the shallot and cook stirring a few times, until the shallot has softened but not browned. Add the quinoa, stock, and sage, and bring to a boil.&nbsp;<\/p>\n\n\n\n<p>Cover and cook over low heat until the stock has been absorbed, 20 to 25 minutes.&nbsp;<\/p>\n\n\n\n<p>Remove from heat and let stand, covered, for 5 minutes. Discard the sage stems, fluff the quinoa with a fork. Stir in the chives, parsley, and toasted almonds.
