{"id":815,"date":"2020-08-28T23:46:02","date_gmt":"2020-08-28T23:46:02","guid":{"rendered":"http:\/\/christiniacrippes.com\/food\/?p=815"},"modified":"2020-08-28T23:46:02","modified_gmt":"2020-08-28T23:46:02","slug":"cake-and-amaretto-lets-go","status":"publish","type":"post","link":"http:\/\/christiniacrippes.com\/food\/2020\/08\/28\/cake-and-amaretto-lets-go\/","title":{"rendered":"Cake and amaretto, let\u2019s go!"},"content":{"rendered":"\n<p>The <a href=\"https:\/\/chicago.suntimes.com\/2020\/8\/27\/21404463\/jacob-blake-father-kenosha-police-shooting-hospital-bed-handcuffs\" target=\"_blank\" rel=\"noreferrer noopener\">general state of the US<\/a>, the <a href=\"https:\/\/crooked.com\/articles\/gop-convention-trump-presidency\/\" target=\"_blank\" rel=\"noreferrer noopener\">Republican National Convention<\/a>, and <a href=\"https:\/\/www.amestrib.com\/story\/news\/2020\/08\/27\/ames-bar-brewery-owners-iowa-gov-kim-reynolds-orders-bars-close-story-county-covid-19-coronavirus\/5647916002\/\" target=\"_blank\" rel=\"noreferrer noopener\">bars closing down again in Ames<\/a> has got me thinking about booze. <a href=\"https:\/\/www.rollingstone.com\/politics\/political-commentary\/jacob-blake-trey-pellerin-gop-biden-1049626\/\" target=\"_blank\" rel=\"noreferrer noopener\">A lot<\/a>.\u00a0<\/p>\n\n\n\n<p>Of course, now that I\u2019m an old and immunocompromised, I haven\u2019t seen the inside of a bar since I can\u2019t remember when, but well enough before the pandemic hit Iowa that I can\u2019t be sure of my last stop in my preferred <a rel=\"noreferrer noopener\" href=\"https:\/\/www.theundergroundames.com\/menus\" target=\"_blank\">ye olde saloon<\/a>. The GOP, OTOH, is lately a <a rel=\"noreferrer noopener\" href=\"https:\/\/www.bleedingheartland.com\/2020\/08\/27\/state-flying-blind-on-test-iowas-positivity-rate\/\" target=\"_blank\">constant <\/a><a rel=\"noreferrer noopener\" href=\"https:\/\/apnews.com\/2e0e60b6571044a80ea2717078ac78eb\" target=\"_blank\">source<\/a> of making me think about the drink. It was simple but not necessarily my idea of a great cake. I\u2019ve never been happier to concede I was wrong.&nbsp;<\/p>\n\n\n\n<p>I loved it. I loved it a lot.&nbsp;<\/p>\n\n\n\n<p>I had an inkling it might be good when the mixture yielded a wonderfully spongy batter; I was a little more concerned when to cook it through the top was rather darkened. By the time I used my silicone spatula to loosen the cake from my Le Creuset and turn it onto a large plate, I was sold.&nbsp;<\/p>\n\n\n\n<p>The topping of a boozy glaze (amaretto simmered with apricot jam!) and some toasted almond slices only made it better.&nbsp;<\/p>\n\n\n\n<p>It also had the benefit of being a simple boozy cake. Just one layer. Mixed in a stand mixer. A simple glaze. Simmered for just a few minutes (a little longer for me because I was convinced the apricot pieces were just jelly that hadn\u2019t broken down rather than the obvious pieces of fruit that they were).&nbsp;<\/p>\n\n\n\n<p>All in all, a pretty great way to spend a bit of time away from news and in the comfort of a kitchen.\u00a0<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"1024\" height=\"768\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/08\/20200816_151454-1024x768.jpg\" alt=\"\" class=\"wp-image-813\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/08\/20200816_151454-1024x768.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/08\/20200816_151454-300x225.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/08\/20200816_151454-768x576.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/08\/20200816_151454.jpg 1280w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>Pretty, tasty, pretty tasty.<\/figcaption><\/figure>\n\n\n\n<p>Here\u2019s what I did, sticking to the recipe:&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients\u00a0<\/strong><\/p>\n\n\n\n<p><em>For the cake:<\/em><\/p>\n\n\n\n<ul><li>\u00be c. (1 \u00bd stick) unsalted butter<\/li><li>\u00be c. sugar<\/li><li>1 (7 oz.) tube almond paste<\/li><li>Zest of 1 lemon<\/li><li>Zest of 1 orange<\/li><li>\u00bc c. amaretto liqueur\u00a0<\/li><li>1 t. vanilla extract<\/li><li>3 eggs<\/li><li>\u00bd c. all-purpose flour<\/li><li>1 t. baking powder<\/li><\/ul>\n\n\n\n<p><em>For the amaretto glaze:\u00a0<\/em><\/p>\n\n\n\n<ul><li>2 T. apricot jam<\/li><li>\u00bc c. amaretto liqueur<\/li><\/ul>\n\n\n\n<p><em>For finishing:\u00a0<\/em><\/p>\n\n\n\n<ul><li>\u00bc to \u00bd c. sliced almonds, toasted<\/li><li>Confectioners\u2019 sugar, to desired level<\/li><\/ul>\n\n\n\n<p><strong>Directions\u00a0<\/strong><\/p>\n\n\n\n<p>Heat oven to 350 degrees. Grease a 9-inch coated skillet (or springform cake pan if you\u2019re traditional).&nbsp;<\/p>\n\n\n\n<p>For the cake, in a mixing bowl, cream butter and sugar 3 to 5 minutes, or until light and fluffy. Mix in almond paste, orange and lemon zests, amaretto, and vanilla. Beat in eggs, flour, and baking powder. Pour into prepared pan, and bake for 45 minutes, or until knife inserted in the center comes out clean. Let cool.&nbsp;<\/p>\n\n\n\n<p>For the glaze, in a saucepan over low heat, stir jam and amaretto together until smooth.&nbsp;<\/p>\n\n\n\n<p>To finish, Unmold the cake onto a large plate or serving dish, pour glaze over the top. Sprinkle with toasted almonds and a dusting of confectioners\u2019 sugar.
