This time, I happened to be going through <a href=\"https:\/\/www.tasteofhome.com\/\" target=\"_blank\" rel=\"noopener\">Taste of Home<\/a> when I came across a recipe from an Iowan. (Yay!)<\/p>\n<p>I was intrigued but was ultimately won over when the recipe included my two favorite summer fruits: peaches and blackberries (it was actually a berry mix but blackberries were listed first, and honestly, I just made it with blackberries).<\/p>\n<p>Plus, it had <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cardamom\" target=\"_blank\" rel=\"noopener\">cardamom<\/a>, and I almost never have excuses to use this most exciting of spices.<\/p>\n<p>I may have overdone it by adding a full 1 t. of cardamom when the recipe called for just \u00bc t., but I *really* like it, so I didn\u2019t mind and my sweetie has been enjoying bowlfuls for breakfast (don&#8217;t judge!) alongside me without complaint. My other adaptation was using lemon zest in place of orange zest in the topping, and that worked well for my tastes as well.<\/p>\n<p>I also went ahead and used my Le Creuset that measures 9 in. not 10 in., as the recipe called for. It all fit like a charm, though the liquid did bubble over a little in the oven and we got the delightful aroma of burnt sugar. Not the worst deal but perhaps a 10 in. skillet is the wiser course.<\/p>\n<figure id=\"attachment_784\" aria-describedby=\"caption-attachment-784\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-784\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164428-300x242.jpg\" alt=\"\" width=\"300\" height=\"242\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164428-300x242.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164428-768x621.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164428-1024x827.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-784\" class=\"wp-caption-text\">There&#8217;s fruit underneath all that, I promise!<\/figcaption><\/figure>\n<p>Here\u2019s what I did, adapting slightly:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>For the fruit mix<\/em><\/p>\n<ul>\n<li>\u00bd c. sugar<\/li>\n<li>3 T. cornstarch<\/li>\n<li>1 t. ground cinnamon<\/li>\n<li>\u00bc to 1 t. ground cardamom, to taste<\/li>\n<li>6 c. peaches (6 to 8 peaches), sliced<\/li>\n<li>2 c. blackberries (about 12 oz.\/two small containers)<\/li>\n<li>Juice from \u00bd lemon<\/li>\n<\/ul>\n<p><em>For the topping<\/em><\/p>\n<ul>\n<li>1 c. all-purpose flour<\/li>\n<li>\u00bc c. sugar<\/li>\n<li>Zest from 1 lemon<\/li>\n<li>\u00be t. baking powder<\/li>\n<li>\u00bc t. salt<\/li>\n<li>\u00bc t. baking soda<\/li>\n<li>3 T. cold butter<\/li>\n<li>\u00be c. buttermilk<\/li>\n<li>Vanilla ice cream, for serving, optional<\/li>\n<\/ul>\n<p><strong>Directions\u00a0<\/strong><\/p>\n<p>Heat oven to 375 degrees. In a large bowl, mix together the sugar, cornstarch, and spices. Add the peaches, blackberries, and lemon juice. Toss to combine, and then transfer to a 9- to 10-inch cast iron skillet (10-inch probably preferred).<\/p>\n<p>In a medium bowl, bring together the first six topping ingredients (flour, sugar, lemon zest, baking powder, salt, and baking soda). Cut in the butter with a pastry blender or two knives or your fingers until the mixture resembles coarse crumbs. Add the buttermilk, and stir until just moistened. Drop by tablespoonfuls over the fruit mixture.<\/p>\n<p>Bake uncovered until topping is golden brown, 40 to 45 minutes.
