It just took me a little longer to get there than everyone else.<\/p>\n<p>I\u2019ve long liked the calming effects of kneading and the comforting aroma of bread rising, so I\u2019m surprised I haven\u2019t satisfied my soul sooner. Besides, as I have shown, I\u2019ve <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/slideshow-fantastic-bread-recipes-from-loafin-around\/collection_9479a31c-95a9-5d4b-b46f-88437b3eff50.html\" target=\"_blank\" rel=\"noopener\">long loved<\/a> being a baker.<\/p>\n<p>Even better, after making <a href=\"https:\/\/www.seriouseats.com\/\" target=\"_blank\" rel=\"noopener\">Serious Eats<\/a>\u2019 <a href=\"http:\/\/christiniacrippes.com\/food\/2020\/07\/18\/fat-fluffy-focaccia\/\" target=\"_blank\" rel=\"noopener\">focaccia<\/a>, I perused their other bread options and was delighted to find the double comfort of pizza and bread.<\/p>\n<figure id=\"attachment_781\" aria-describedby=\"caption-attachment-781\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-781\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-300x300.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-150x150.jpg 150w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-768x768.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-1024x1024.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164229-100x100.jpg 100w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-781\" class=\"wp-caption-text\">Pizza bread ingredients!<\/figcaption><\/figure>\n<p>It sounded pretty easy, and because it called for a pound of pizza dough, and my measurements for my <a href=\"http:\/\/christiniacrippes.com\/food\/2020\/07\/03\/when-the-moon-hits-your-eye\/\" target=\"_blank\" rel=\"noopener\">favorite dough<\/a> don\u2019t lead to exactly a pound, I just made a double batch and hoped there would be some leftover to have a homemade pizza later in the week. I was not disappointed.<\/p>\n<p>With ingredients like garlic, dough, pepperoni, Parmesan, and red pepper flakes, it\u2019s impossible for it to have turned out bad.<\/p>\n<p>My only issue was pre-cooking the pepperoni with the garlic resulted in slightly crunchy pepperoni pieces in some cases after baking. It still didn\u2019t taste bad, but I question if it\u2019s totally necessary to pre-cook the meat, or maybe I\u2019d just cook it for the barest minimum amount of time or on a lower setting to ensure the garlic gets cooked into the butter and crisps a little.<\/p>\n<p>Still, we had no problem eating all 24 knots in just a few days.<\/p>\n<figure id=\"attachment_782\" aria-describedby=\"caption-attachment-782\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-782\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164313-300x293.jpg\" alt=\"\" width=\"300\" height=\"293\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164313-300x293.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164313-768x750.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/07\/20200731_164313-1024x1000.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-782\" class=\"wp-caption-text\">Pizza bread!<\/figcaption><\/figure>\n<p>Here\u2019s what I did, mostly sticking to the recipe, only making my own dough:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 T. butter<\/li>\n<li>2 T. olive oil, plus more for drizzling<\/li>\n<li>4 oz. pepperoni, cut into \u00bc in. squares<\/li>\n<li>Red pepper flakes, to taste<\/li>\n<li>6 cloves garlic, minced<\/li>\n<li>\u00bc c. chopped fresh parsley leaves<\/li>\n<li>2 T. chopped fresh chives<\/li>\n<li>\u00be c. Parmesan cheese, grated, divided<\/li>\n<li>Flour, for dusting<\/li>\n<li>1 lb. homemade or store-bought pizza dough (I used about \u2154 of a double recipe of my favorite dough recipe <a href=\"http:\/\/christiniacrippes.com\/food\/2020\/07\/03\/when-the-moon-hits-your-eye\/\" target=\"_blank\" rel=\"noopener\">here<\/a> and reserved the rest for a thin-crust homemade pizza)<\/li>\n<li>Pizza\/Pasta sauce, for serving<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat butter and oil in a 9- to 10-inch cast iron skillet over medium heat until butter melts. Add pepperoni and cook until it starts to crisp, about 2 minutes (see note above about doing this for slightly less time). Add pepper flakes and garlic, and cook for about an additional 1 minute. Remove from heat and add the parsley and chives, and stir to combine. Transfer mixture to a large bowl and stir in \u00bd c. of the Parmesan. Do not wipe out the skillet.<\/p>\n<p>On a lightly floured surface, divide the dough in half. Take one piece and roll or stretch into a rectangle about 8 in. long by 4 in. wide. Use a bench scraper or sharp knife, and cut crosswise into 12 strips. Repeat with the other half, to yield 24 total strips.<\/p>\n<p>Tie each strip into a knot and transfer to the bowl with the pepperoni, etc. mixture. Use your hands to toss and fold to coat the knots in the mixture. Place the knots in the skillet in a single layer, and drizzle with more olive oil.<\/p>\n<p>Cover the skillet with plastic, and set aside until doubled, about 4 hours. Or, do as I did, and refrigerate for about 12 to 16 hours.<\/p>\n<p>When ready to bake, heat the oven to 425 degrees, and place oven rack in the center. Remove the plastic wrap. Sprinkle on the remaining \u00bc c. cheese. Place skillet in the oven and bake until golden brown and crisp, about 25 to 30 minutes.
