{"id":748,"date":"2020-06-12T23:24:59","date_gmt":"2020-06-12T23:24:59","guid":{"rendered":"http:\/\/christiniacrippes.com\/food\/?p=748"},"modified":"2020-06-12T23:24:59","modified_gmt":"2020-06-12T23:24:59","slug":"quick-easy-chicken-fun-style","status":"publish","type":"post","link":"http:\/\/christiniacrippes.com\/food\/2020\/06\/12\/quick-easy-chicken-fun-style\/","title":{"rendered":"Quick &#038; easy chicken, Fun style"},"content":{"rendered":"<p>I mentioned last week that my sweetie found boneless, skinless chicken, and he was good enough to buy 2 lbs, which meant I could make <a href=\"https:\/\/www.foodnetwork.com\/profiles\/talent\/amy-thielen\" target=\"_blank\" rel=\"noopener\">Amy Thielen<\/a>\u2019s wonderfully fancy yet simple rosemary chicken with half the meat.<\/p>\n<p>But it also meant that I could use the rest to make a <a href=\"https:\/\/www.bettycrocker.com\/\" target=\"_blank\" rel=\"noopener\">Betty Crocker<\/a> recipe that coats chicken breasts in sour cream and onion potato chips. So, I was willing to wait until we could get what we need, and willing to eat less meat and get different cuts going forward so I could enjoy this the way I wanted.<\/p>\n<p>There\u2019s not a lot of work to it, but that doesn\u2019t make it any less tasty. Besides, what\u2019s not to love from chicken and potato chips mashed together.<\/p>\n<p>It was a true delight, and I hope to make it again someday when meat is easier to come by and I feel less guilty buying some, since I\u2019m usually content with a nice vegetarian meal.<\/p>\n<figure id=\"attachment_740\" aria-describedby=\"caption-attachment-740\" style=\"width: 298px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-740\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-298x300.jpg\" alt=\"\" width=\"298\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-298x300.jpg 298w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-150x150.jpg 150w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-768x772.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-1019x1024.jpg 1019w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200524_002940-100x100.jpg 100w\" sizes=\"(max-width: 298px) 100vw, 298px\" \/><figcaption id=\"caption-attachment-740\" class=\"wp-caption-text\">Potato chips and chicken make pure perfection.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<ul>\n<li>~4 c. sour cream and onion potato chips, crushed (yielding ~1 c.)<\/li>\n<li>1 T. parsley flakes<\/li>\n<li>1 large egg<\/li>\n<li>2 t. Worcestershire sauce<\/li>\n<li>~2 T. vegetable oil<\/li>\n<li>4 (about 1 \u00bc lb.) boneless skinless chicken breasts<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Place the crushed potato chips on a large shallow plate, and mix with the parsley. In a separate small bowl, beat together the egg and Worcestershire sauce.<\/p>\n<p>In a 9- to 10-inch skillet, heat the oil over medium heat (cooking only half at a time or using 2 skillets if it doesn\u2019t all fit into one skillet). Dip a chicken breast into the egg mixture and then coat with the potato chip mixture, pressing in as appropriate. Repeat with the remaining chicken breasts.<\/p>\n<p>Cook the coated chicken breasts in the heated oil for about 10 to 12 minutes, turning once about halfway through, until the coating is a deep golden brown and the chicken is cooked through.
