{"id":733,"date":"2020-05-22T23:24:40","date_gmt":"2020-05-22T23:24:40","guid":{"rendered":"http:\/\/christiniacrippes.com\/food\/?p=733"},"modified":"2020-05-22T23:24:40","modified_gmt":"2020-05-22T23:24:40","slug":"peanut-butter-jelly-pie-peanut-butter-jelly-pie","status":"publish","type":"post","link":"http:\/\/christiniacrippes.com\/food\/2020\/05\/22\/peanut-butter-jelly-pie-peanut-butter-jelly-pie\/","title":{"rendered":"Peanut butter jelly pie, peanut butter jelly pie"},"content":{"rendered":"<p>I can\u2019t be the only one in these times who\u2019s been reverting back to things that are comforting, while also somewhat ironically enjoying the chance to do things I\u2019ve never done.<\/p>\n<p>Some examples: I\u2019ve recently rediscovered my love of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Iron_Chef_America\" target=\"_blank\" rel=\"noopener\">Iron Chef: America<\/a>, while also enjoying the fantasy dread and panic (as opposed to the real life dread and panic) of <a href=\"https:\/\/en.wikipedia.org\/wiki\/American_Horror_Story\" target=\"_blank\" rel=\"noopener\">American Horror Story<\/a>. I\u2019ve dyed my hair (and donning a mask when I interact with other people), but I\u2019m also wearing the same handful of outfits week in and week out.<\/p>\n<p>This week\u2019s recipe is very much in line with this new Christinia-in-the-time-of-Covid.<\/p>\n<p>I made a peanut butter &amp; jelly pie. I suggested &#8212; and am still considering for future alternative uses &#8212; mixing the peanut butter mixture with the whipped cream that goes on top.<\/p>\n<p>However, upon tasting my second slice, I realized the simple fact that the pie really brings everything that\u2019s great about a PB&amp;J into a pie and doesn\u2019t need my additional tweaking. I\u2019ve enjoyed more slices since then and think it works wonderful as is.<\/p>\n<p>I do think it\u2019ll be worth trying to fold in the whipped cream at some point, and maybe trying it with something chocolatey, or as my sweetie suggested making a sort of fluffernutter. I\u2019m still considering my options but suffice to say this simple, familiar dish has opened up whole new worlds for me.<\/p>\n<p>Quick note: I went ahead and homemade my crust so that I could make it in my little Le Creuset, and I homemade my own whipped cream because it\u2019s just so much better. But if you don\u2019t have the energy in these times to make this, just remember you can save some time and energy by getting those items premade, at which point it\u2019s basically just mixing the peanut butter center and topping with the jelly of your choice. No judgement from me.<\/p>\n<figure id=\"attachment_729\" aria-describedby=\"caption-attachment-729\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-729\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200515_191113-300x284.jpg\" alt=\"\" width=\"300\" height=\"284\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200515_191113-300x284.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200515_191113-768x728.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200515_191113-1024x971.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2020\/05\/20200515_191113.jpg 1920w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-729\" class=\"wp-caption-text\">Ooh aah.<\/figcaption><\/figure>\n<p>Here\u2019s what I did, using a <a href=\"https:\/\/www.tasteofhome.com\/\" target=\"_blank\" rel=\"noopener\">Taste of Home<\/a> recipe, with some alterations for my homemade crust and topping:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>For the crust:<\/em><\/p>\n<ul>\n<li>1 \u00bd c. graham cracker crumbs<\/li>\n<li>5 T. unsalted butter, melted<\/li>\n<li>\u00bc c. sugar<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p><em>For the pie:<\/em><\/p>\n<ul>\n<li>1 package (8 oz.) cream cheese, softened<\/li>\n<li>\u00bd c. confectioners\u2019 sugar<\/li>\n<li>\u00bd c. peanut butter (I went with creamy for the pie, even though I typically like crunchy, but you do you)<\/li>\n<li>\u00bd c. strawberry preserves (any flavor will work if you like it in a PB&amp;J but this seemed perfect for the nostalgia I craved)<\/li>\n<\/ul>\n<p><em>For the topping:\u00a0<\/em><\/p>\n<ul>\n<li>1 c. heavy cream<\/li>\n<li>2 T. sugar<\/li>\n<li>Salted peanuts, for topping (optional)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><em>For the crust:<\/em><\/p>\n<p>Heat the oven to 350 degrees. Mix together the ingredients in a medium bowl, and then press them into the bottom and up the sides of a 9-inch skillet. Bake for 12 to 15 minutes until the edges are golden. Remove from oven, and let cool completely.<\/p>\n<p><em>For the pie center:\u00a0<\/em><\/p>\n<p>In a large bowl, beat together the cream cheese, sugar, and peanut butter until smooth. Spoon into cooled crust. Top with the preserves (I thought it\u2019d be too messy, but it actually works.).<\/p>\n<p><em>For the topping:\u00a0<\/em><\/p>\n<p>Beat together the heavy cream and sugar.<\/p>\n<p><em>To finish:\u00a0<\/em><\/p>\n<p>Place the whipped topping on top of the pie, and peanuts if using.
