{"id":555,"date":"2019-10-05T00:47:56","date_gmt":"2019-10-05T00:47:56","guid":{"rendered":"http:\/\/christiniacrippes.com\/food\/?p=555"},"modified":"2019-11-02T01:17:14","modified_gmt":"2019-11-02T01:17:14","slug":"lazy-lovely-layered-lasagna","status":"publish","type":"post","link":"http:\/\/christiniacrippes.com\/food\/2019\/10\/05\/lazy-lovely-layered-lasagna\/","title":{"rendered":"Lazy, lovely layered lasagna"},"content":{"rendered":"<p>I was scrolling through Twitter one fine day keeping up on the <a href=\"https:\/\/twitter.com\/search?q=%23TrumpMeltdown&amp;src=typeahead_click\">shitshow<\/a> that is our current American political system when I was distracted by something not actually terrible, an <a href=\"https:\/\/www.epicurious.com\/\">Epicurious<\/a> video.<\/p>\n<p>The short clip I watched without sound was a recipe for slow-cooker lasagna. I mean, most times I make lasagna, there\u2019s too many noodles to fit but this time, oof, I really distributed poorly for the layers. But all was not lost. I just made sure to take from the better filled areas and the less filled areas and made it work.<\/p>\n<p>However, if you, dear reader, try the same, be sure to go light on the filling as you roll up the noodles.<\/p>\n<p>Now, having made lasagna a few different ways during my time, starting with the <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/loafin_around\/start-the-new-year-with-a-plate-licking-good-lasagna\/article_e1d7e179-119f-58e8-b061-506d8a956ab5.html\">traditional-ish<\/a>, I have to say my favorite is still actually the <a href=\"http:\/\/christiniacrippes.com\/food\/2018\/12\/15\/oops-all-crusts-lasagna\/\">sheet pan recipe<\/a> because I like my lasagna crispy. But if you really like the saucy bits, this one is for you. And either way, good lasagna is good lasagna, so this was quite good.<\/p>\n<figure id=\"attachment_558\" aria-describedby=\"caption-attachment-558\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-558\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/10\/20191001_204255-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/10\/20191001_204255-300x225.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/10\/20191001_204255-768x576.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/10\/20191001_204255-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-558\" class=\"wp-caption-text\">BRB, there&#8217;s more in the fridge.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 box lasagna noodles, cooked to package directions<\/li>\n<li>32 oz. jar of arrabbiata sauce, or red pasta sauce to your liking<\/li>\n<li>1 (15 oz.) tub ricotta<\/li>\n<li>3 c. mozzarella, shredded, divided<\/li>\n<li>1 c. Parmesan cheese, shredded, divided<\/li>\n<li>4 oz. feta, crumbled<\/li>\n<li>1 egg<\/li>\n<li>1 (10 oz.) box frozen chopped spinach, thawed<\/li>\n<li>10 oz. marinated artichokes, chopped<\/li>\n<li>\u00bd T. basil, chopped<\/li>\n<li>\u00bd T. dried oregano<\/li>\n<li>\u00bd T. dried rosemary<\/li>\n<li>1 t. red pepper flakes, optional<\/li>\n<li>Pepper, to taste<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat the oven to 325 degrees.<\/p>\n<p>In a large bowl, mix together the ricotta, 1 c. mozzarella, \u2153 c. Parmesan, egg, spinach, artichokes, and the herbs and spices, until well mixed. EVENLY spread the mixture onto about 14 lasagna noodles, more if necessary, and roll the noodles lengthwise.<\/p>\n<p>Poor about \u00bc of the sauce onto the bottom of a Dutch oven. Add about half the rolled noodles to the Dutch oven; sprinkle with 1 c. mozzarella, \u2153 c. Parmesan, and half the feta, and about half the remaining sauce. Place the remainder of the rolled noodles on top, and then top with the remaining sauce, and cheeses.<\/p>\n<p>Cover the Dutch oven and bake for about 30 minutes; then, remove from heat and remove the lid. Bake another about 20 to 30 minutes, uncovered, until the cheese is browned on top.
