But I love even more the absence of guilt when I home make a similar recipe.<\/p>\n<p>This is how I came to create my own broccoli cheddar rice casserole.<\/p>\n<figure id=\"attachment_450\" aria-describedby=\"caption-attachment-450\" style=\"width: 292px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-450\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184804-292x300.jpg\" alt=\"\" width=\"292\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184804-292x300.jpg 292w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184804-768x790.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184804-996x1024.jpg 996w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184804.jpg 1867w\" sizes=\"(max-width: 292px) 100vw, 292px\" \/><figcaption id=\"caption-attachment-450\" class=\"wp-caption-text\">Broccoli rice casserole ingredients.<\/figcaption><\/figure>\n<p>Sure, recipes abound for throwing together cooked rice, a pre-made cheese sauce, and some microwaved broccoli, but with slightly more effort, you can enjoy baked, cheese, rice, and broccoli that doesn\u2019t feel quite as bad for you.<\/p>\n<p>Though it wasn\u2019t hard to find either kind of recipe online, there was nothing I found that quite suited my tastes. So, I did what I usually do, I mixed and matched to make it suitable for my Dutch oven dreams.<\/p>\n<p>All the recipes of any kind called for mushrooms but I just about refuse to eat them. If they\u2019re tiny and hidden, I may be able to handle some. I can kind of do raw ones, sometimes, if I have to, but as much as I try to keep an open mind about foods, I just can\u2019t do it with mushrooms. So, if you like them, feel free to remove one head of broccoli from my recipe and substitute with 8 oz. mushrooms, or do both and have an extra vegetable-y recipe.<\/p>\n<p>With my changes, and thanks to mostly <a href=\"https:\/\/www.southernliving.com\/\">Southern Living<\/a> and a little <a href=\"https:\/\/www.seriouseats.com\/\">Serious Eats<\/a>, and I had the perfect recipe, and even better, it came together quickly and deliciously. I loved it.<\/p>\n<figure id=\"attachment_451\" aria-describedby=\"caption-attachment-451\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-451\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184927-300x273.jpg\" alt=\"\" width=\"300\" height=\"273\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184927-300x273.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184927-768x698.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184927-1024x931.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/05\/20190510_184927.jpg 1920w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-451\" class=\"wp-caption-text\">Nom nom noms.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>6 T. butter, divided<\/li>\n<li>1 c. panko<\/li>\n<li>2 c. cheddar, divided (I like extra sharp)<\/li>\n<li>1 c. Parmesan, divided<\/li>\n<li>3 c. broth (I used homemade; the recipe calls for chicken)<\/li>\n<li>2 c. milk<\/li>\n<li>1 bay leaf<\/li>\n<li>2 t. thyme<\/li>\n<li>1 large onion, chopped<\/li>\n<li>2 stalks celery, chopped<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>1 t. red pepper flakes (optional but I liked the kick)<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>\u00bd c. flour<\/li>\n<li>1 \u00bd c. uncooked long-grain rice<\/li>\n<li>1 c. sour cream<\/li>\n<li>3 heads fresh broccoli florets, chopped to stems<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat oven to 350 degrees.<\/p>\n<p>Melt 2 T. butter, and combine it with the panko and \u00bd c. of the cheddar, and \u00bd c. of the Parmesan, and toss together. Set aside.<\/p>\n<p>Melt remaining 4 T. in a large Dutch oven over medium heat. Add the onion and celery and cook, stirring occasionally, until the onion is lightly browned, 3 to 5 minutes. Add the broccoli (and mushrooms if using), the salt, pepper, thyme, bay leaf, and red pepper flakes, and cook for another 3 to 5 minutes until the broccoli has started to turn bright green. Add garlic and cook for another minute. Stir in the flour until combined.<\/p>\n<p>Add the rice, and stir for another couple minutes. Stir in the broth and milk, and bring to a boil. Add the remaining cheeses, and the sour cream, and mix until well combined. Cover with Dutch oven lid or aluminum foil.<\/p>\n<p>Bake for 25 to 30 minutes until the rice is tender, the liquid is nearly absorbed, and the broccoli is cooked through. Add the panko mixture on top, and bake for another 10 minutes until the top is browned.
