I wasn\u2019t expecting that it\u2019d be super useful in this year of Dutch ovens. After all, how many things could you make in a Dutch oven with so few ingredients?<\/p>\n<p>I should have known better than to doubt. It turns out, there\u2019s plenty enough.<\/p>\n<p>What caught my eye this week was his salami risotto.<\/p>\n<figure id=\"attachment_436\" aria-describedby=\"caption-attachment-436\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-436\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1952047833579361483877098-300x255.jpg\" alt=\"\" width=\"300\" height=\"255\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1952047833579361483877098-300x255.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1952047833579361483877098-768x653.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1952047833579361483877098-1024x871.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-436\" class=\"wp-caption-text\">Salami risotto ingredients.<\/figcaption><\/figure>\n<p>Not just because I love salami and was looking for something without a lot of work. But also because I just needed two ingredients of the 5 (technically 8, because there\u2019s also pantry items salt, pepper, and olive oil that I always have on hand) to make this meal happen.<\/p>\n<p>With the salami and arborio rice acquired, I was ready to go.<\/p>\n<p>I added more salami than called for, and probably same for the Parmesan and sour cream so it\u2019s not quite as healthy as Jamie Oliver would like but meh. I also replaced the mascarpone with sour cream because I had it on hand and it wasn\u2019t worth buying a tub of mascarpone for just one heaping tablespoon. It worked fine, and of course, it\u2019s easy to boot.<\/p>\n<p>Delightfully, even the chopping is easy, as it\u2019s just cutting onions into wedges. I still cried, but it was short.<\/p>\n<p>A short time on the stove-top later, the mix went into the oven and I didn\u2019t think about it again until it was ready to eat. Ah-mazing.<\/p>\n<figure id=\"attachment_437\" aria-describedby=\"caption-attachment-437\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-437\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1953523501536939693648585-300x258.jpg\" alt=\"\" width=\"300\" height=\"258\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1953523501536939693648585-300x258.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1953523501536939693648585-768x660.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190426_1953523501536939693648585-1024x880.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-437\" class=\"wp-caption-text\">salami, onions, cheese, perfection.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3 oz. salami<\/li>\n<li>2 onions, wedged<\/li>\n<li>300 g. arborio rice<\/li>\n<li>1 heaping T. sour cream<\/li>\n<li>\u2153 to \u00bd c. grated Parmesan<\/li>\n<li>~2 T. olive oil<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>1.2 L. boiling water<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat the oven to 350 degrees. Heat the Dutch oven on high heat on the stove top.<\/p>\n<p>Cook the onions on high heat for 3 to 5 minutes until browning. Add the oil, salami, salt and pepper, and arborio rice and cook for a minute more. Add the water, sour cream, and cheese.<\/p>\n<p>Stir to combine, and then carefully place in the oven, uncovered.<\/p>\n<p>Bake the risotto for 40 minutes.
