It involves many of the same ingredients, but it\u2019s completely different.<\/p>\n<p>This recipe was one of my favorites dating back to college, where I\u2019d regularly order it at the student union. As a young recent college grad, though, I still consulted with my mom and we came up with a recipe that I\u2019ve been using ever since.<\/p>\n<p>Mine never tasted exactly the same, but in fact, it was better. It was homemade and my artichokes are marinated. Plus, I may go a little overboard with rosemary, which suits my tastes even better.<\/p>\n<p>It\u2019s also incredibly easy to make, if not quite as instant as the student union dish. But if you boil the tortellini in the Dutch oven, it easily can be another one-pot pasta dish.<\/p>\n<p>All in all, it\u2019s perfect.<\/p>\n<p>And I\u2019ll work on making fewer pasta dishes here soon.<\/p>\n<figure id=\"attachment_430\" aria-describedby=\"caption-attachment-430\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-430\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190419_174135-300x236.jpg\" alt=\"\" width=\"300\" height=\"236\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190419_174135-300x236.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190419_174135-768x604.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190419_174135-1024x805.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190419_174135.jpg 1920w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-430\" class=\"wp-caption-text\">So pretty, and tasty too.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 bag frozen cheese tortellini (I like the tri-colored stuff because it\u2019s pretty), cooked according to package instructions<\/li>\n<li>1 onion, chopped<\/li>\n<li>1 lb. chicken breasts, chopped<\/li>\n<li>2 T. oil<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Fresh rosemary, chopped, to taste<\/li>\n<li>1 (14 oz) large jar marinated quartered artichokes hearts, drained<\/li>\n<li>1 pint cherry tomatoes, halved<\/li>\n<li>1 jar alfredo sauce (I get the one with garlic, but you can do traditional or whatever you like)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat the oil in a large Dutch oven over medium heat. Add the onions and chicken, and saute until the chicken is cooked through, stirring occasionally. Add in some of the rosemary (I like to add more as it nears completion too), and salt and pepper, as the chicken is cooking.<\/p>\n<p>Once chicken is cooked, add in the artichokes and cook for another 3 to 5 minutes, continuing to stir occasionally. Add in the tomatoes and cook another 1 to 2 minutes, until just warmed. Stir in the sauce and heat until boiling (it should happen quick with a good Dutch oven).<\/p>\n<p>Add back in the pasta and more rosemary (if desired), stir to combine, and enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When I was making my Grandma Crippes\u2019 chicken cacciatore recipe, I was reminded of another of my favorite dishes.
