{"id":421,"date":"2019-04-13T00:28:41","date_gmt":"2019-04-13T00:28:41","guid":{"rendered":"http:\/\/christiniacrippes.com\/food\/?p=421"},"modified":"2019-04-13T00:28:41","modified_gmt":"2019-04-13T00:28:41","slug":"making-homemade-bread-even-better","status":"publish","type":"post","link":"http:\/\/christiniacrippes.com\/food\/2019\/04\/13\/making-homemade-bread-even-better\/","title":{"rendered":"Making homemade bread even better"},"content":{"rendered":"<p>Like Oprah, <a href=\"https:\/\/www.buzzfeed.com\/christianzamora\/oprah-loves-bread\">I love bread<\/a>.<\/p>\n<p>I love it in all its forms, but one of my favorites is the one I made earlier <a href=\"http:\/\/christiniacrippes.com\/food\/2019\/01\/26\/there-will-be-bread\/\">this year<\/a>, since it\u2019s so simple and yet so tasty. I also love the store-bought jalapeno-cheddar bread, but I\u2019d never thought to make it myself.<\/p>\n<p>Then, I came across a recipe from <a href=\"https:\/\/50campfires.com\/\">50 Campfires<\/a> that pretty much combined the two. It basically took the recipe I used earlier this year, and then just added jalapenos and cheddar.<\/p>\n<figure id=\"attachment_424\" aria-describedby=\"caption-attachment-424\" style=\"width: 225px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-424\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_194933659297098357685618-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_194933659297098357685618-225x300.jpg 225w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_194933659297098357685618-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-424\" class=\"wp-caption-text\">I forgot to snap a pic before I started, but picture the ingredients from my earlier bread recipe and then picture them mostly combined to look like this floury dough ball.<\/figcaption><\/figure>\n<p>I decided to give it a shot.<\/p>\n<p>My only concern as I was making it was the sheer amount of jalapenos. I like spicy but I have my limits, and this bread includes two in the dough (and rises for nearly 24 hours with them in it) and then one on top.<\/p>\n<p>Mercifully, if you follow the instructions to remove the seeds from the two that go in the dough and just keep them for the one on top, it\u2019s not overly spicy. There\u2019s a little kick from the top slices but otherwise, it\u2019s pretty mild. I\u2019m sure the yeast and cheese help.<\/p>\n<p>It\u2019s more effort than store-bought but even better, and considering how quickly this stuff disappeared, I\u2019ll be making it again (and again).<\/p>\n<figure id=\"attachment_423\" aria-describedby=\"caption-attachment-423\" style=\"width: 225px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"wp-image-423 size-medium\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_210257292452365637901426-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_210257292452365637901426-225x300.jpg 225w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/04\/20190408_210257292452365637901426-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-423\" class=\"wp-caption-text\">The cutest and tastiest little ball of bread ever.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3 c. all-purpose flour<\/li>\n<li>1 t. active dry yeast<\/li>\n<li>1 t. salt<\/li>\n<li>1 c. grated sharp cheddar, divided (I didn\u2019t really measure but this is a good reference amount)<\/li>\n<li>3 jalapeno peppers, divided<\/li>\n<li>1 \u00bd c. warm water<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>In a large bowl, mix together the flour, salt, and yeast. Add in all but 4 T. of the grated cheddar cheese. Seed and chop two of the jalapenos, and add into the flour mix. Stir to combine all.<\/p>\n<p>Add the water, and stir until a shaggy, sticky dough forms (a dough scraper works really well for this).<\/p>\n<p>Cover the bowl, preferably with plastic wrap (grease it if you expect it to rise to touch the wrap). Let the dough rise in a cool, dry place (not the refrigerator) for 12 to 24 hours.<\/p>\n<p>Heat oven to 450 degrees.<\/p>\n<p>Place the Dutch oven in the oven, covered, for 30 minutes. Meanwhile, transfer the dough to a heavily floured surface and shape it into a rounded loaf, but don\u2019t knead it.<\/p>\n<p>When the Dutch oven is ready, carefully remove from oven and remove lid. Carefully place the dough inside, and cover again. Bake covered for 30 minutes.<\/p>\n<p>Carefully remove from oven, and remove lid. Sprinkle the top of the loaf with the remaining cheddar, and the sliced jalapeno (with seeds, if desired) and set slices on top. Bake uncovered for another 10 to 15 minutes until the bread and cheese are golden brown.<\/p>\n<p>Carefully remove loaf from the Dutch oven, place on a rack to cool (for at least an hour before slicing), and enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Like Oprah, I love bread.
