Then, I looked at the recipe and found its ingredients, aside from the Guinness, to not really be my tastes.<\/p>\n<p>So, I started looking for what would be my tastes and found that I didn\u2019t see a single beef stew recipe that looked up my alley. Then, I just decided to make my own recipe.<\/p>\n<p>The ingredients were all the things I thought would be in my ideal beef stew and then just added Guinness to that.<\/p>\n<p>Mercifully, it worked perfectly. Well, again, to my tastes.<\/p>\n<p>My only mistake was a tad too many potatoes. I wanted to clip up the three large russets we had and uh, that made for a pretty potato-y stew. But there are worse things.<\/p>\n<p>It was time consuming, but that was expected. And it\u2019s not very difficult or active time so that\u2019s OK too. All in all, it\u2019s just a good weekend dish.<\/p>\n<figure id=\"attachment_400\" aria-describedby=\"caption-attachment-400\" style=\"width: 225px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-400\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190310_2227442917589252136226416-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190310_2227442917589252136226416-225x300.jpg 225w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190310_2227442917589252136226416-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-400\" class=\"wp-caption-text\">Beer and beef, what could be better?!<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 lb. beef chunks<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>2 T. oil<\/li>\n<li>3 small to medium onions, chopped<\/li>\n<li>6 cloves garlic, chopped<\/li>\n<li>1 can or \u00bd pint diced tomatoes<\/li>\n<li>1 c. flour<\/li>\n<li>20 oz Guinness<\/li>\n<li>4 c. broth (any will do)<\/li>\n<li>4 carrots, chopped<\/li>\n<li>1 parsnip, chopped<\/li>\n<li>3 medium potatoes, chopped<\/li>\n<li>4 celery, chopped<\/li>\n<li>1 \u00bd c. frozen peas<\/li>\n<li>1 T. Worcestershire sauce<\/li>\n<li>2 t. dried oregano<\/li>\n<li>Parsley, chopped<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat Dutch oven over medium heat and add 1 to 2 T. oil. Brown beef chunks 5 to 10 minutes, adding salt and pepper as you stir. Add onions and cook another 5 minutes. Add garlic and tomatoes and cook another 1 to 2 minutes.<\/p>\n<p>Add flour and stir it in until mixed 1 to 2 minutes more.<\/p>\n<p>Slowly add Guinness and broth, and cook until boiling. Reduce heat, cover, and cook on the stove top for about 45 minutes.<\/p>\n<p>Meanwhile, heat oven to 325 degrees.<\/p>\n<p>After about 45 minutes, add parsnips, potatoes, carrots, and celery to the Dutch oven. Cover again and cook in the oven for an hour and a half or so.<\/p>\n<p>Add Worcestershire sauce, oregano, parsley, and peas. Cook in the oven for another 5 to 10 minutes.
