Growing up in Illinois, we had two unique school holidays, and this was one of them thanks to a large Polish population. The other, of course in the Land of Lincoln, was that we celebrated Lincoln\u2019s birthday specifically not Presidents Day generally.<\/p>\n<p>I have written <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/haute_dish\/worldly-polish-casserole-marks-special-holiday\/article_426bd8df-9468-5b1f-aad9-3cfc0abc4d5c.html\">in<\/a> <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/loafin_around\/bialy-is-bread-but-don-t-call-it-a-bagel\/article_c8ee79e6-602a-5065-9865-212b2066c643.html\">the<\/a> <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/soup_or_salad\/a-cabbage-and-kielbasa-soup-to-celebrate-casimir-pulaski\/article_4113757c-82bd-5ffd-9d4a-6e116d27d79c.html\">past<\/a> about how awesome Pulaski was (while making Polish foods) and how he warrants recognition for his role in the Revolutionary War.<\/p>\n<p>Especially in <a href=\"https:\/\/www.theguardian.com\/us-news\/2018\/dec\/21\/us-immigration-policy-2018-travel-ban-migrant-caravan\">these times<\/a>, it\u2019s important to remember and recognize that immigrants were playing a role in this country going back to literally its founding.<\/p>\n<p>If you want a refresher about the \u201c<a href=\"https:\/\/www.nps.gov\/fopu\/learn\/historyculture\/casimir-pulaski.htm\">Father of the American Cavalry,<\/a>\u201d check out his <a href=\"https:\/\/en.wikipedia.org\/wiki\/Casimir_Pulaski\">Wikipedia page<\/a>.<\/p>\n<p>To celebrate the man, his contributions, and my own (one-quarter) <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/haute_dish\/family-favorites-potato-dumplings-improved-over-generations\/article_321944e4-3609-5d79-ab7c-24c996b4fdaf.html\">Polish heritage<\/a>, I try to find something to make from his home country each Pulaski Day. None of the recipes perfectly suited what I was picturing so I melded them all together.<\/p>\n<p>I won\u2019t lie, this soup will not be for everyone. But if you like dill pickles, and me and my sweetie do, boy is it great. It also all comes together relatively quickly.<\/p>\n<p>For my tastes and sensibilities, it\u2019s an awesome winter soup, featuring heavily those ingredients that in times past (and in lean times now) that keep well throughout a long winter and are easy enough to come by. We, in fact, had most ingredients on hand except not quite enough of them. And I did get fresh dill but the dried stuff would do just fine.<\/p>\n<p>The results were pure perfection, particularly for this time of year and this holiday.<\/p>\n<figure id=\"attachment_387\" aria-describedby=\"caption-attachment-387\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-387\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190227_2056375932761899177979814-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190227_2056375932761899177979814-300x225.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190227_2056375932761899177979814-768x576.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/03\/20190227_2056375932761899177979814-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-387\" class=\"wp-caption-text\">What lies beneath is an abundance of pickle flavored perfection.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 T. unsalted butter<\/li>\n<li>2 onions, chopped<\/li>\n<li>2-3 celery ribs, chopped<\/li>\n<li>2-3 medium carrots, chopped<\/li>\n<li>4 T. all-purpose flour<\/li>\n<li>6 c. broth (chicken or vegetable)<\/li>\n<li>1 T. dried oregano<\/li>\n<li>2 t. dried thyme<\/li>\n<li>2 bay leaves<\/li>\n<li>3 medium russet potatoes, chopped<\/li>\n<li>1 c. pickle juice<\/li>\n<li>1 c. dill pickles, grated<\/li>\n<li>Dill, chopped<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Sour cream, for serving (optional)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Melt the butter in a large Dutch oven over medium heat. Add the onions, carrots, and celery and saute for 5 to 10 minutes and vegetables are softened.<\/p>\n<p>Add the flour slowly and stir until combined. Cook for another 2 to 3 minutes. Add the thyme, oregano, and bay leaves. Then, stir in the broth.<\/p>\n<p>Bring mixture to a boil, and then add the potatoes. Cover and simmer, stirring occasionally, for about 20 to 25 minutes until the potatoes are just softened.<\/p>\n<p>Add the pickle juice, pickles, salt and pepper to taste, and cook another 5 minutes, covered.<\/p>\n<p>Stir in the dill, and adjust seasonings as necessary.<\/p>\n<p>Serve with sour cream and any additional dill as desired, and enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Monday marks my favorite holiday, Casimir Pulaski Day.
