I don\u2019t like to dress up; I don\u2019t like the fancy-pants restaurants you\u2019re *supposed* to go to for special occasions; and mostly, I don\u2019t like the pressure to have a romantic evening.<\/p>\n<p>If they\u2019re your thing, more power to you; make the reservations, and have a good time.<\/p>\n<p>I was lucky, then, to find a partner who feels the same way I do. A restaurant that requires us to feel like we don\u2019t belong is not a restaurant we\u2019re going to, no matter the rave reviews. Advance planning, likewise, isn\u2019t really our thing.<\/p>\n<p>Instead, I usually try to find something special but simple to make for dinner &#8212; and yet, I also don\u2019t feel pressured to do so, if I feel lazy or if take-out beckons. In past years, I\u2019ve celebrated the holiday with <a href=\"https:\/\/wcfcourier.com\/news\/opinion\/blogs\/soup_or_salad\/add-spice-to-valentine-romance-with-this-african-peanut-stew\/article_f2958248-c4e4-50ae-b0cd-f9299a949954.html\">peanut stew<\/a>. This year, I found something even simpler and yet also fancier: shrimp scampi.<\/p>\n<figure id=\"attachment_365\" aria-describedby=\"caption-attachment-365\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-365\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190208_193316517252851635860094-300x193.jpg\" alt=\"\" width=\"300\" height=\"193\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190208_193316517252851635860094-300x193.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190208_193316517252851635860094-768x493.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190208_193316517252851635860094-1024x657.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-365\" class=\"wp-caption-text\">Shrimp scampi ingredients. They didn&#8217;t all fit but they would have if I didn&#8217;t buy large quantities of wine and olive oil.<\/figcaption><\/figure>\n<p>I\u2019d never made it before, and honestly, hadn\u2019t gotten it in restaurants because it\u2019s usually too pricey to justify what it is. But after tasting it, I can see why it\u2019s a go-to fancy dinner order. It\u2019s damn delicious.<\/p>\n<p>It\u2019s also still too easy to make at home to justify the upcharge for having it made for me. There\u2019s few ingredients, and it\u2019s even a one-pot meal. In all, it\u2019s about a half-hour of work. It\u2019s the perfect stay-at-home dinner date whether you have a special Valentine or not.<\/p>\n<figure id=\"attachment_366\" aria-describedby=\"caption-attachment-366\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-366\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190204_2115072934197124487601329-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190204_2115072934197124487601329-300x225.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190204_2115072934197124487601329-768x576.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2019\/02\/20190204_2115072934197124487601329-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-366\" class=\"wp-caption-text\">SHRAMMPIES!!!!<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 lb. angel hair pasta or similar (I used spaghetti because I wanted whole wheat and I couldn\u2019t find it in angel hair)<\/li>\n<li>1 \u00bd lb. peeled and deveined uncooked shrimp<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>2 T. olive oil<\/li>\n<li>\u00bd c. dry white wine (and, let\u2019s be honest, more to serve in a glass on the side)<\/li>\n<li>6 cloves garlic, thinly sliced<\/li>\n<li>\u00bc t. red pepper flakes (I used more but we like a little more kick to our food)<\/li>\n<li>3 T. unsalted butter, cold and cut into smallish cubes<\/li>\n<li>\u00bc c. coarsely chopped parsley, flat-leaf preferred<\/li>\n<li>Juice from \u00bd lemon<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Bring water to a boil in a large Dutch oven. Add the pasta, cooking to al dente according to package instructions (between 7 and 12 minutes, depending on pasta type). Reserve \u00bd c. of cooking water, and then drain the pasta and set aside.<\/p>\n<p>Meanwhile, pat the shrimp dry and season both sides with salt and pepper, to taste. In the same large Dutch oven where you cooked your pasta, heat the oil over medium-high heat. Add the shrimp and cook for about 1 minute. Flip, and then add the wine, garlic, and red pepper flakes. Cook until the shrimp are just opaque and the wine has reduced by half, about 2 to 3 more minutes.<\/p>\n<p>Remove the Dutch oven from heat, add the butter cubes, and stir until melted. Add the pasta, parsley, and lemon juice. Toss until combined, adding reserved pasta water by the tablespoon, until a sauce forms that coats the pasta. (Don\u2019t worry if you don\u2019t use all the water.)
