But it\u2019s great to occasionally expand my palate and eat (somewhat) healthier fare. So, that is how I came to have a wide variety of Asian condiments in fridge door.<\/p>\n<p>This week\u2019s recipe thankfully allowed me to use so many of them and not add to my collection. I had bought some chicken thighs a weekend earlier when I made my venture to Whole Foods for <a href=\"http:\/\/christiniacrippes.com\/food\/2018\/09\/08\/saving-the-planet-one-shrimpie-at-a-time\/\">seafood<\/a>, so my purchases for this one amounted to three items.<\/p>\n<p>Cauliflower, a sweet potato, and a red pepper were all it took to complete the sheet pan hoisin sriracha chicken recipe I had found a few weeks earlier from <a href=\"https:\/\/www.tasteofhome.com\/\">Taste of Home<\/a>.<\/p>\n<figure id=\"attachment_239\" aria-describedby=\"caption-attachment-239\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-239\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180909_190114-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180909_190114-300x225.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180909_190114-768x576.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180909_190114-1024x768.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180909_190114.jpg 1440w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-239\" class=\"wp-caption-text\">Hoisin sriracha chicken ingredients.<\/figcaption><\/figure>\n<p>I mostly followed the recipe, except I\u2019m lazy and used boneless, skinless chicken thighs. I might have added more <a href=\"https:\/\/www.huyfong.com\/\">sriracha<\/a> because I didn\u2019t measure it but it was damn spicy so add carefully or taste the sauce before pouring on the meat and vegetables.<\/p>\n<p>I have to say I enjoyed it thoroughly, but my favorite thing was perhaps just how simply it came together.<\/p>\n<p>I made it when we had the \u201cfake fall\u201d this past weekend, so I prepped the vegetables, made the sauce, and then sat in front of our firepit for a while before coming back to put it all together. About 45 minutes later, we had dinner, and a couple days worth of leftovers.<\/p>\n<figure id=\"attachment_238\" aria-describedby=\"caption-attachment-238\" style=\"width: 266px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-238\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180914_191654-266x300.jpg\" alt=\"\" width=\"266\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180914_191654-266x300.jpg 266w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180914_191654-768x866.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180914_191654-908x1024.jpg 908w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/09\/20180914_191654.jpg 958w\" sizes=\"(max-width: 266px) 100vw, 266px\" \/><figcaption id=\"caption-attachment-238\" class=\"wp-caption-text\">Don&#8217;t let the cauliflower fool you, this meal is flavorful and delicious.<\/figcaption><\/figure>\n<p>Here\u2019s what I did:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>\u2153 c. hoisin sauce<\/li>\n<li>\u2153 c. soy sauce (preferably low-sodium but we had regular on hand)<\/li>\n<li>2 T. honey<\/li>\n<li>2 T. sriracha (I didn\u2019t measure but perhaps it\u2019s best to measure on your taste for spicy foods)<\/li>\n<li>1 T. rice vinegar (I was out of rice wine vinegar, which I planned to use, so I used apple cider vinegar)<\/li>\n<li>2 t. sesame oil (I definitely used more but I love sesame oil)<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 t. minced fresh ginger<\/li>\n<li>6 boneless, skinless chicken thighs<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>1 medium sweet potato, cut into cubes<\/li>\n<li>4 c. fresh cauliflower, cut into bite-size pieces<\/li>\n<li>1 red bell pepper, chopped<\/li>\n<li>Sesame seeds, optional for topping<\/li>\n<li>Oil for coating<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat oven to 400 degrees.<\/p>\n<p>Mix together the first eight ingredients, the hoisin sauce through the ginger, in a small bowl. Line a large rimmed sheet pan with aluminum foil and coat with a layer of oil (I use the spray kind). Place the sweet potato and chicken on prepared sheet pan, and add salt and pepper to taste.<\/p>\n<p>Brush on about \u2153 of the hoisin sauce mixture.<\/p>\n<p>Bake for about 15 minutes. Add the cauliflower and red pepper, and brush on another \u2153 of the hoisin mixture.<\/p>\n<p>Bake another 25 to 30 minutes longer, until the chicken is cooked through.
