In fact, this is the first time this year that I made this week\u2019s recipe on the same day I posted my blog.<\/p>\n<p>Like any (recovering) journalist, I live for a deadline.<\/p>\n<p>Thankfully, I picked another recipe this week that not only was as simple as it seemed but came together with little effort. I needed the latter after losing an altercation with a cat that has left my right hand only partially usable.<\/p>\n<p>Strawberry shortcake bars also happen to be delicious and the kind of treat that will please my in-laws as we head to St. Louis this weekend to see them.<\/p>\n<figure id=\"attachment_165\" aria-describedby=\"caption-attachment-165\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-165\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-1-300x215.jpg\" alt=\"\" width=\"300\" height=\"215\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-1-300x215.jpg 300w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-1-768x551.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-1-1024x734.jpg 1024w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-1.jpg 1506w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-165\" class=\"wp-caption-text\">Strawberry shortcake bars ingredients (sans flour because I keep it in a big honkin&#8217; container because I use that much).<\/figcaption><\/figure>\n<p>Everything\u2019s coming up Christinia!<\/p>\n<p>Because I\u2019m cutting it down to the wire (again), two quick notes on this recipe:<\/p>\n<ul>\n<li>It\u2019s pretty strong on the shortcake, which I like, but it may be a bit dry for others\u2019 tastes. If that\u2019s not your thing, maybe cut down on the flour or add a little more whipped cream to the topping.<\/li>\n<li>It doesn\u2019t specifically call for it, but a stand mixer works really well for this recipe. Creaming both the cake and the topping is enough of a pain when one\u2019s hand is healthy but it was pretty much a requirement for me this week. A hand mixer would also work, but I really appreciated saving the labor this week.<\/li>\n<\/ul>\n<figure id=\"attachment_166\" aria-describedby=\"caption-attachment-166\" style=\"width: 270px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"size-medium wp-image-166\" src=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-2-270x300.jpg\" alt=\"\" width=\"270\" height=\"300\" srcset=\"http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-2-270x300.jpg 270w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-2-768x853.jpg 768w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-2-922x1024.jpg 922w, http:\/\/christiniacrippes.com\/food\/wp-content\/uploads\/2018\/06\/strawberry-shortcake-2.jpg 972w\" sizes=\"(max-width: 270px) 100vw, 270px\" \/><figcaption id=\"caption-attachment-166\" class=\"wp-caption-text\">Fresh from the oven (and cooled) and it was amazing.<\/figcaption><\/figure>\n<p>Here\u2019s what I did, mostly following a recipe I found randomly <a href=\"http:\/\/www.sixsistersstuff.com\/recipe\/2016\/06\/strawberry-shortcake-sheet-cake\/\">online<\/a>:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>For the bars:<\/em><\/p>\n<ul>\n<li>1 c. (or 2 sticks) unsalted butter, plus a little more for coating the sheet pan (I used to use salted but we\u2019re *trying* to be healthier)<\/li>\n<li>2 c. sugar (like I said, trying)<\/li>\n<li>4 large eggs<\/li>\n<li>2 t. vanilla<\/li>\n<li>5 c. all-purpose flour<\/li>\n<li>1 t. salt<\/li>\n<li>\u00bd t. baking soda<\/li>\n<\/ul>\n<p><em>For the topping:<\/em><\/p>\n<ul>\n<li>8 oz. cream cheese, softened<\/li>\n<li>1 c. powdered sugar<\/li>\n<li>1 t. vanilla<\/li>\n<li>1 c. heavy whipping cream, whipped (or 8 oz Cool Whip but I like real cream, again, trying)<\/li>\n<li>About 1 lb. strawberries, sliced<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat oven to 375 degrees, and grease a large rimmed sheet pan.<\/p>\n<p>In a large bowl, cream the butter and sugar until fluffy. Then, add the eggs one at a time until well incorporated. Add in vanilla and stir until combined.<\/p>\n<p>In a separate large bowl, mix together the flour, salt, and baking soda. Add to the wet mixture and beat until combined. (The dough will look like cookie dough.)<\/p>\n<p>Spread the mixture on the sheet pan, using greased hands to spread evenly onto the pan.<\/p>\n<p>Bake shortcake for 10 to 15 minutes until golden.<\/p>\n<p>Remove from oven and let cool.<\/p>\n<p>Meanwhile, mix together the cream cheese, powdered sugar, and remaining vanilla. Beat until smooth. Fold in the whipped cream, and chill until the bars are cool.<\/p>\n<p>Spread the cream mixture on top of the shortcake, and then cover with the sliced strawberries.
